A Cafe Oasis in Bustling Castle Towers with the added Bonus of Campos Coffee

Popular North Ryde establishment, The Dining & Co has opened in Castle Towers. Shoppers can enjoy healthy, chef created gourmet dishes, at an affordable price. Founded by Justin Park, a former Executive Chef at Peter Doyle at The Quay, and owner and chef of Big Tree House Cafe in Rydalmere. Castle Hill is now treated to Executive Chef quality food in a convenient location.

The atmosphere is fresh and light with modern fixtures and soft tones. The seating is very comfortable, making it easy to take some time out from the buzz of one of the Hills favourite shopping centres. Finding they serve Campos Coffee is an added bonus, as you know they have personally trained the staff to ensure your coffee will always be faultless. The drinks selection is impressive, offering T2 regular and organic teas, freshly squeezed juices, iced drinks, frappes, smoothies, shakes, and my personal favourite – the affogato.

Menu Created by 5-Star Dining Chef

As expected from a former 5-star dining Executive Chef, the food is beautifully presented and perfectly balanced. While particularly challenged by the small preparation space, the menu includes the most popular items from their ‘mother café’ in North Ryde. Breakfast is available all day and includes everything from Coconut Chia Pudding with fresh fruits and almonds, to Justin’s famous Goats on Toast and eggs done every way imaginable. The eggs are poached perfectly on their Corn Fritters, with avocado salsa, and bacon cooked crispy – just how I like it. The hero is the sweet tomato relish which perfectly rounds out this rich, salty savoury dish.

Breakfast Worth Coming Back For

One of the most popular breakfast dishes is the Brioche French Toast. A decadent serving of two brioche slices, cooked crispy on the outside but remaining thick and fluffy inside. Pierced with a syringe filled with maple syrup, you appreciate the ability to adjust the sweetness to your liking. The fresh fruit and berry compote, matched with the full flavoured creamy vanilla mascarpone, provide a good deal of sweetness in their own right. The added texture of the pistachio ‘snow’, with a crunchy crumble like consistency, gives this dish a unique well rounded advantage.

The Lunch Adventure

The lunch menu (available from 11:30) is a 5 star adventure, starting with a wide choice of salads that are way beyond boring. An example is the Grilled Baby Calamari with lentil, chick pea, preserved lemon, baby capers, mixed leaves, cherry tomatoes, watermelon radish, with sherry vinaigrette, char grilled lemon, finished off with a parmesan crisp. For a hearty feed there is the Steak Sandwich, Cajun Chicken Burger and Pulled Pork Burger – all served with moorish fat chips. The Pulled Pork is succulent and slightly sweet and the toasted brioche bun holds the contents well. The slaw has quite a tang to it and the rocket adds a sharp freshness. I love the portion size as it means I have enough room to enjoy the accompanying onion rings and chips.
