catering, retail, order, cafeIt’s quite feasible to say that Western Sydney has our very own answer to Adriano Zumbo – and his name is Francesco Gulisano.  Owner and Head Chef of Dolcettini, Francesco grew up as a typical Italian Dural boy working on farms and in restaurants. His passion and inspiration for food came from his Mamma and Nonna, who always used the best produce and never skimped on quality.

Success began early for Francesco, winning ‘Apprentice of the Year’ during his apprenticeship in 2005.  Since then this passionate chef has been awarded over 40 medals by the
Sydney Royal Fine Food Show including 3 champion titles for best desserts.

Ricotta and pear breakfast breadIn 2012, Francesco and his wife Bianca opened Dolcettini originally as a wholesale business, supplying their cakes and pastries for local restaurants and individual orders. However local demand and Francesco’s passion for all food, soon saw them expanding into a small retail space offering breads, coffee, gelato and brunch items alongside their cakes and pastries. Their popularity in the local community has grown quickly as Dolcettini won the 2014 Local Business award for ‘Outstanding Bakery/Cake Shop’ in the Hills District.

 

Their location in a largely industrial and commercial space is testament to their original plans as wholesalers, however they have transformed the space well into a ‘hip’ yet comfortable café, incorporating a balcony that offers a nice alfresco area. From early commuter coffees, to casual business lunches, relaxing afternoon coffees and after school gelato treats for the kids, the café keeps the front retail space busy while the huge industrial kitchen churns away out the back.

The main focus of course, is still on the supply of French and Italian inspired specialty cakes and desserts. The large kitchen space allows Francesco and his team to create an extensive menu range that can often incorporate up to eight elements – making their desserts delicate, decadent and absolutely delicious.

From the ‘Pretty Woman Torte’ of light vanilla sponge, orange soak, chocolate custard, caramelised almonds, hazelnut milk chocolate mousse, and a white chocolate vanilla bean glaze, to the gluten and nut free ‘Jaffa Soufflé’. And then there is the ‘Millefoglie’ with layers of puff pastry and vanilla bean crème patissier, finished with a caramelised top and optional fresh strawberries and crushed roasted almonds, alongside the ‘Tiramisu’ cake made with vanilla sponge, coffee liquor, vanilla bean mascarpone, and reduced coffee cream.

By far my favourite choice would have to be the ‘Snickers My Way’ dessert cake made with a milk chocolate and peanut butter crunch base, layered with milk chocolate mousse and salted peanut nougat, topped with salted caramel crème. Francesco refuses to cut corners and makes everything from scratch from the highest quality. And with this kind of superior standards matched with real food ingredients, even your dietician will give the okay to indulge for a special occasion or treat.

Any time you visit Dolcettini, you’ll be hard pressed to leave without trying one of their sweet delights from the front counter. The selection and display is ever changing and not listed on any menu, so it’s a treat in itself to visit and see what is on offer that particular day.

signature dessert ricotta pastry cornettoIf you’re fortunate enough, you’ll get to try their signature ‘Ricotta Cornetto’ which can be best described as the cross between a croissant and a cannoli, however the sweet rich vanilla filling encased in a crisp buttery shell almost defies description, as it’s like nothing you’ve ever tried before.
