Local Gluten Free and Sourdough Specialists

The Ponds is one of Western Sydney’s newest shopping centres – opening in May 2015. Serving the local community with predominately food and beverage options including Grocery, Cafes, Restaurants, Butcher and Bakery, the centre offers a stylish and contemporary feel to shopping and dining.

Silverleaf Artisan Bakery is owned and run by locals Amy and Simon Pomeroy, a young couple who have been together for over ten years. When they bought land in the Ponds area, their land release was called ‘Silverleaf’ – based on native local fauna. Little did they know, it would become the name of their first ever Bakery, launched in conjunction with the Shopping Centre opening. “We had been thinking about our own bakery for a while, but thought it would be a bit further down the track. But then we saw the local shopping centre was opening so we thought we would apply for the Bakery.” Their vision for their own Bakery matched exactly what The Ponds were looking for, and the rest is now history.

Just like the native fauna, the essence behind Silverleaf Artisan Bakery is creating their products the true and natural way. They take pride in producing quality products from scratch using wholesome ingredients, that are free from preservatives or artificial ingredients. Every day they create a wide range of fresh, authentic artisan sourdough breads using a traditional form of developing and incorporating ‘wild yeast’. The dough is moulded by hand and left to ferment for 15 hours to enable the flavour and natural yeasts to develop. From traditional white, to grain and even a ‘Raspberry White Chocolate’ variety, their Sourdough has become so well known, they’ve started supplying the Lime and Coconut Café at Windsor.

As they understand the dietary requirements of different households they also have a large Gluten Free range of breads. Regular customers are growing fast, and will drive a decent distance for their freshly baked Gluten Free items that taste better than any other on the market.

Along with their speciality Sourdough and Gluten Free products, you’ll find all your favourite bakery items including White, Grain, Rye and Wholemeal Loaves and Rolls, Turkish bread, Baguettes, Savoury and Sweet Scrolls, Bagels, Slices, Brownies, Tarts, Muffins, Pies and Sausage Rolls.

Simon is very familiar with the retail bakery world, starting his career as an Apprentice Baker for Bakers Delight North Rocks Westfield in 2004. It wasn’t long before he moved to head office as a Technical Baker, helping to train others out in the marketplace. With experience also in product development for Tip Top Bakery, and IGAs main product supplier Metcash, Simon brings a wealth of knowledge and passion to his own venture.


The irony is that their best-selling item is made by Amy, who has no bakery experience whatsoever. When she’s not running the business side of Silverleaf Bakery, Amy works part time as a Cardiac Sonographer. However it’s her homemade caramel slice that has customers fighting to be first in line when there’s only one or two slices left in the display case. This wickedly good slice has a moist and light biscuit base, with a very thick layer of rich caramel and a milk chocolate topping which makes it just that bit extra special. This item was so popular with customers that they’ve had to introduce a Gluten Free version for their biggest fans.

Of course they are sure to introduce seasonal favourites like hot cross buns at Easter, and for Christmas there’s Fruit Mince Tarts, Shortbread, Christmas Cupcakes and even some Festive Sourdough!

With a passion for good food and great bread, Silverleaf Artisan Bakery is over and above any grocery or chain story bakery you’ll find in the area. Locals are spoilt for choice, and those seeking out Gluten Free items will be more than pleased with what they find. The only downside is you usually need to get there early, as popular items move fast, and are rarely found towards the end of the day.
